Class Description

Join our most popular hands-on practical sushi making class with Sushi Made Simple cookbook author, Atsuko! Atsuko will guide you through the art of the sushi making process, step-by-step, combining traditional techniques and new approaches. First of all you will learn how to cook classic premium white sushi rice, then make a variety of sushi including maki (hosomaki, California roll and temaki hand roll), and some kinds of nigiri. We have included aburi (blow torched) sushi which will take your sushi adventure to another level! We start by introducing the ingredients, then have a cooking session, and finally we eat what we have made at the end of the class! Class recipes and skills - Classic Sushi Rice: Made with premium Koshihikari rice from Japan. - Knife Skills: Slice fish fillets for sashimi and sushi. - How to source and prepare sushi-grade fish for parties - Hosomaki: Classic rolled sushi using a bamboo mat and your favourite fillings. - Uramaki: Inside-out rolls with spicy tuna, avocado, and fried shallots. - Temaki: Hand rolls shaped like ice cream cones with fillings such as tuna and avocado. - Nigiri: Oval-shaped rice topped with salmon, sea bass, and creative toppings. - Aburi: Blow-torched fatty salmon nigiri with nikiri sauce, topped with sansho What is included - Fine quality ingredients (e.g. sashimi grade quality from Moxon's fishmongers) - Online recipe booklet - Sit down meal at the end of the class (or to take away) - Atsuko’s Kitchen Apron to wear in the class (feel free to bring your own) - Refreshments throughout the class  What to expect -Maximum 8-10 guests, some elements may require working in pairs with a classmate, don’t worry if you’ve come alone – it’s a great way to meet new people and have a laugh Vegan or vegetarian options are available—let us know your dietary needs in advance when you book.     All classes are led by Atsuko, an experienced Japanese cuisine instructor since 2008 and author of three cookbooks. Intimate classes (max 8-10 people), hands-on, friendly, and fun. Held in a charming venue on Columbia Road, Shoreditch. Open to learners of all levels. Explore the essence of Japanese cooking. Participants enjoy a communal meal of the dishes they prepared.
  • How do the cooking classes at Atsuko's Kitchen typically work?
    Introduction: The class begins with a warm welcome from Atsuko and a cup of organic green tea. ⁠Hands-on Cooking: Participants engage in hands-on cooking, learning to prepare various Japanese dishes while collaborating with others in the cooking process. ⁠Guided Instruction: Atsuko provides step-by-step instructions and personal guidance throughout the session. ⁠ ⁠Interactive and Fun: Participants encouraged to ask questions and share their cooking experiences. ⁠Meal Preparation: The class focuses on preparing a full meal. Enjoying the Meal: Sit down and enjoy the dishes made during the class.
  • What should I wear or bring with me to the class?
    Please wear comfortable clothes and closed-toed shoes. Aprons, all kitchen tools, and ingredients will be provided for the cooking classes. You can also bring your own apron if you wish.
  • Will I eat the food I make in a class?
    Yes, you will eat all the dishes that you make at the end of the class. If you prefer taking the food you prepared home rather than eat it at the venue, we can provide a take away box for you. Please be aware that we suggest you put the meal in the refrigerator and consume it within a day.
  • What if I have a food allergy or special dietary need?
    We will try to accommodate for special dietary requirements whenever possible, however we require as much notice as possible in order to do so. Please add your note when you book online to let us know what your dietary requirements are. Please be aware that some classes are easier to alter than others.
  • Can I cancel or change my booking if something comes up?
    Bookings are non-refundable and non-transferable, to a different class date, so please make sure you can attend the class before you book. Alternatively, you may ask a friend or family member to replace you. Please kindly inform us of any replacements. Please read our full Terms and Conditions here.
  • Are the classes interactive or solely observational?
    Whether you are a beginner or an experienced cook, you can expect to actively participate and practice cooking during these classes.
  • Are the classes suitable for children?
    We welcome all ages, however if your child is younger than 14 and would like to attend, they must be accompanied by a parent or guardian. The class length requires intense and sustained focus for younger kids.
  • Classes are all booked, when do you release new ones?
    Please sign up to our mailing list and you will be the first to be notified of new classes.
  • Do you have vegan/vegetarian dishes available?
    Yes – When there is a mixed class, we will cook vegan/vegetarian dishes separately. Please advise us of your food preferences when you book the course. There are many dishes that can become vegan/vegetarian by replacing meat or fish with soy products. Please let us know your preference on alternative ingredients so we can prepare for your dietary requirements.
  • Is it possible to book a special group event?
    Yes – if you are planning a surprise birthday party, team building or corporate event, social occasion or celebration, we will be very happy to create your bespoke special cooking event! Just drop us a line by email at classes@atsukoskitchen.com with as much information as possible, and we will respond with a quotation.
  • Can I arrange a class as a present for someone else?
    Yes, you can book either an individual space in a group session or a private lesson. Feel free to contact us for availability. Please note that if you book a scheduled class on their behalf, we will be unable to change the date or refund you if the recipient of your gift cannot make it. Please check our Terms and Conditions before you book. We would also recommend that you purchase one of our gift vouchers instead. This way the recipients can choose the preferred date and class from our range of classes. The vouchers are valid for 12 months after purchase.
